Purslane is tastier than meat! Neighbors from Turkey taught me how to cook weed
-Ingredients:
A bunch of fresh purslane, washed and chopped
2 tomatoes, finely diced
1 cucumber, peeled and chopped
1 small red onion, thinly sliced
1/2 cup crumbled feta cheese
Juice of 1 lemon
1/4 cup olive oil
Salt and freshly ground black pepper
A handful of chopped fresh mint or parsley
-Method:
1.Combine Vegetables: In a large bowl, mix together the tomatoes, cucumber, red onion, and purslane.
2.Make Dressing: In a small bowl, whisk lemon juice, olive oil, salt, and pepper.
3.Toss Salad: Pour the dressing over the salad and toss to coat.
4.Add Toppings: Sprinkle crumbled feta cheese and fresh herbs on top.
